Attack technique, you can check out the video below. I actually managed to defeat him in a few seconds by using the giant crossbow Ballista. You can just let him come to you and perform an attack so that he is in line with the Ballista. After that simply dodge the attack and run towards the Ballista and fire it. Don’t look back or anything just run straight and grab the Ballista. If you hesitate, the Pursuer will just wreck the Ballista and it will be very difficult to defeat him after that.

If you manage to hit him with the Ballista arrow, he will incur massive damage. He should be down 90% of his health and now you can kill him with one hit. The usual Parry, Dodge, Circle Strafing strategy can also be used to defeat him, but that will take a lot longer than using the Ballista.
